I had fun playing this last year because we tried out so many soup recipes in just a couple of weeks. It was great for cold Football Saturdays! We enjoyed a lot of the recipes, but nothing seemed to beat my Olive Garden Zuppa Toscana because it still holds it's reign as our all-time favorite soup. Olive Garden Zuppa Toscana Copy Cat Recipe
1 lb. hot Italian sausage
2 large baking potatoes - 1/4 inch slices, then sliced in half
1 large onion, chopped
4 slices bacon, cooked and crumbled
2 cloves garlic, minced
2 cans chicken broth
1 cup heavy whipping cream
2 cups kale, roughly chopped
1 quart water
Place onions, potatoes, chicken broth, water, and garlic in a pot. Cook on medium heat until potatoes are done. Add cooked sausage, bacon, salt and pepper to taste, and simmer for another 10 minutes. Turn to low heat and add kale and cream. Heat through and serve.
